Back a few months ago, Rosemary and I joined Kelly Ramsey at Big Bat Bourbon to blend a whiskey for Art Eatables. Kelly was kind enough to also buy a bottle of the whiskey that we blended. Matt and I sat down to taste Rosemary’s Pick Bourbon the other day and here are our tasting notes.
Big Bat Bourbon – Rosemary’s Pick
Proof: 90
Age: No Age Statement
Nose:
- Mike: Vanilla, marshmallows, apples, baking spice and oak wood.
- Matt: Vanilla, marshmallows, coffee bean, allspice and oak wood.
Taste:
- Mike: Vanilla, apples, cinnamon and oak wood. Tasted with a dried cranberry and the apple is enhanced and nutmeg joins the cinnamon spice. Tasted with a pecan and a milk chocolate note comes forward to join the party.
- Matt: Vanilla, coffee, allspice and oak wood. The dried cranberry made the vanilla a rich French vanilla. The pecan made it French vanilla, dates, allspice, red pepper flakes and oak wood.
Finish:
- Mike: Medium long with oak wood and cinnamon. The dried cranberry made the finish long with oak wood, apples and nutmeg. The pecan made the finish long with oak wood and chocolate.
- Matt: Medium long with oak wood and coffee. The dried cranberry added lingering vanilla. The pecan made the finish long and spicy with oak wood and red pepper.
I would pair this Bourbon with a cigar that has vanilla and tobacco in the smoke. I would reach for a NUB Maduro cigar.
