Yellowstone Recollection is an excellent Bourbon bottled at 110 proof and is eight years old. Even better, it has a reasonable price of about $65.00. Matt and I first tasted this whiskey at a Yellowstone Bourbon Dinner at Fork & Barrel. We loved it so much I received a bottle from Stephen Fante and was very pleased with the gift. Matt and I sat down to taste it the other day and here are our tasting notes.

Yellowstone Recollection Bourbon

Proof: 110

Age: Eight Years Old

Nose:

  • Mike: Caramel, peaches, baking spices and oak wood.
  • Matt: Caramel, apples, wild berries and oak wood.

Taste:

  • Mike: Caramel, peaches, cinnamon, nutmeg and oak wood. Tasted with a dried cranberry and white pepper joins the party. Tasted with a pecan and milk chocolate and black pepper come forward.
  • Matt: Caramel, apples, blackberries, cardamom and oak wood. The dried cranberry enhanced the caramel. The pecan added milk chocolate.

Finish:

  • Mike: Medium long with oak wood, peaches and cinnamon.  The dried cranberry added white pepper to the finish. The pecan made the finish long with oak wood, milk chocolate and black pepper.
  • Matt: Medium long with oak wood, tobacco and orange zest. The dried cranberry added lingering caramel to the finish. The pecan made the finish long with oak wood, orange zest and milk chocolate.

I would pair this fine Bourbon with a My Father The Judge cigar. I think the rich chocolate and vanilla notes in the smoke would pair well with the caramel in the Bourbon.
