Appalachian Barrel Company is not a distillery. They are rectifiers who source whiskey from other distillers. They are doing a very good job at sourcing their whiskey and bottle some very good bottles of whiskey. The company was founded by brothers Jade and Jessie Haddix and their friend Dr. Heath Brashear. I recently acquired a bottle of their single barrel Bourbon and Matt and I sat down to taste it the other day. Here are our tasting notes.
Appalachian Barrel Company Single Barrel Bourbon
Proof: 120.16
Age: 9.3 Years Old
Nose:
Mike: A very simple nose of vanilla and oak wood.
Matt: Vanilla, marzipan, cedar and oak wood.
Taste:
Mike: Vanilla, peaches, white pepper and oak wood. Tasted with a dried cranberry brings out citrus notes and black pepper. Tasted with a pecan brings out cinnamon and enhances the pepper.
Matt: Vanilla, marshmallows, roasted peach and oak wood. The dried cranberry added sour apple to the flavor. The pecan brought out flavors of caramel, apples and peanut butter.
Finish:
Mike: Medium long with oak wood and white pepper. The dried cranberry made the finish spicy with oak wood, black pepper and lingering orange zest. The pecan made the finish long and spicy with oak wood, white pepper and cinnamon.
Matt: Medium long with oak wood and marshmallows. The dried cranberry added sour apple to the finish. The pecan made the finish long with oak wood and peanut butter.
I would pair this Bourbon with a cigar rich in vanilla and cedar spice. I would pair it with a Rocky Patel Sun Grown cigar.
