Mike And Matt Taste Rabbit Hole Raceking Bourbon

Rabbit Hole is producing some very good whiskeys. I have had this bottle for some time now and it was in the running for whiskey of the month, but narrowly was beaten out by another whiskey. It is a very good Bourbon. Raceking is a five grain Bourbon with a mash bill of 70% corn, 12% rye, 10% malted barley, 4% malted wheat and 3% chocolate malt. It has a very rich candy-like flavor that Matt and I like. Here are our tasting notes.

Rabbit Hole Raceking Bourbon

Proof: 95

Age: Six Years Old

Nose:

Mike: Caramel, chocolate, apples, baking spices and oak wood.
Matt: Caramel, chocolate, raisins, French burnt peanuts and oak wood.

Taste:

Mike: Caramel, chocolate, orange zest, apples, cinnamon, nutmeg and oak wood. Tasted with a dried cranberry and raspberry and white pepper come forward. Tasted with a pecan and it becomes a chocolate covered caramel candy.
Matt: Chocolate, raisins, red pepper flakes and oak wood. The dried cranberry brought out blackberry. The pecan made the pepper a black pepper with blackberry jam.

Finish:

Mike: Long with oak wood, chocolate, cinnamon and nutmeg. The dried cranberry added white pepper to the finish. The pecan made the finish very long with oak wood and rich caramel.
Matt: Long with oak wood and red pepper flakes. The dried cranberry added lingering black berry. The pecan made the finish very long with oak wood, black pepper and lingering blackberry.

I would pair this fine Bourbon with a My Father The Judge cigar. The rich vanilla and chocolate in the smoke would pair well with the caramel and chocolate in the Bourbon.
