Bardstown Bourbon Company is well known for finishing Bourbon in interesting wood barrels. This latest Bourbon is finished in Garryana Oak from Oregon (a type of white oak). It is an interesting marriage of Bourbons. It has 80% Kentucky Bourbon of 10 years old, 12% Indiana Bourbon of 10 years old and 8% Kentucky Bourbon of 9 years old. It is a very pleasant pour that Matt and I tasted the other day. Here are our tasting notes.

Age: Nine Years Old
Nose:
- Mike: Caramel, chocolate, apples, baking spices and oak wood.
- Matt: Caramel, brown sugar, cumin, cinnamon, cherry and oak wood.
Taste:
- Mike: Caramel, chocolate, apples, allspice and oak wood. Tasted with a dried cranberry and pepper spice comes forward. Tasted with a pecan and the chocolate is enhanced.
- Matt: Caramel, cherry, lemon zest, cinnamon and oak wood. The dried cranberry added black pepper spice. The pecan enhanced the caramel and added a note of chocolate.
Finish:
- Mike: Medium long with oak wood and allspice. The dried cranberry made the finish very spicy with oak wood and black pepper. The pecan made the finish long with oak wood and chocolate.
- Matt: Medium long with oak wood and cherry. The dried cranberry made the finish spicy with oak wood and black pepper. The pecan made the finish long with oak wood, black pepper and lingering cherry.
I would pair this fine Bourbon with a Padron 1926 Serie cigar. I think the rich vanilla and chocolate in the smoke would pair well with the sweetness of the Bourbon.
