This whiskey bottled by 15 Stars of Bardstown, Kentucky, was finished in three different barrels. There was a cognac barrel, a rum barrel and an apple brandy barrel used in the finishing of this whiskey. It is a marriage of eight and sixteen year old whiskeys. It makes for an interesting flavor. I received a bottle of this whiskey the other day and Matt and I sat down and tasted it.

Age: Eight and Sixteen Year Old Whiskeys

Nose:

  • Mike: Vanilla, caramel, apples, baking spices and oak wood.
  • Matt: Vanilla, marshmallows, orange zest and oak wood.

Taste:

  • Mike: Vanilla, apples, white pepper and oak wood, Tasted with a dried cranberry and the apple flavor is enhanced. Tasted with a pecan and dark chocolate comes forward and the oak is enhanced.
  • Matt: Vanilla, marshmallows, caramel, red pepper flakes and oak wood. The dried cranberry brought out the orange zest and enhanced the caramel. The pecan brought out a note of dark chocolate.

Finish:

  • Mike: Medium long with oak and pepper. The dried cranberry added some lingering apple notes. The pecan made the finish long and dry with oak wood and white pepper with some lingering dark chocolate.
  • Matt: Medium long with oak wood and red pepper flakes. The dried cranberry added a little orange zest. The pecan made the finish long and dry with oak wood, red pepper flakes and dark chocolate.

I would pair this whiskey with a NUB Maduro cigar. I think the vanilla and rich tobacco in the smoke would pair well with the vanilla and spice of the whiskey.
