Heaven Hill is celebrating ten years at the Evan Williams Experience in downtown Louisville. I find it hard to believe that it has been ten years on Whiskey Row already. They have released three whiskeys distilled at this location under the Square 6 brand. They are only available in the gift shop at The Evan Williams Experience. The latest Bourbon is a wheat recipe Bourbon is created from whiskeys made of two different mash bills. The first is a 74% corn, 16% wheat and 10% malted barley mash bill, while the second is made of 60% corn, 28% wheat and 12% malted barley. They bottled it at 105 proof with no age statement. I [picked up a bottle the other day and Matt and sat down to taste it and we liked it so much that we decided to make it the whiskey of the month for November. Here are our tasting notes.

Square 6 Wheat Recipe Bourbon

Age: No Age Statement

Nose:

  • Mike: Vanilla, bread dough, apples, a hint of pepper and oak wood.
  • Matt: Caramel, green apple, cinnamon and other baking spices, and oak wood.

Taste:

  • Mike: Vanilla, corn, apples, white pepper and oak wood. Tasted with a dried cranberry and it gets spicier with ginger and cinnamon joining the pepper. Tasted with a pecan and the vanilla becomes a rich caramel with apples, ginger, cardamom and oak wood.
  • Matt: Caramel, apples, cinnamon, and oak wood. The dried cranberry made the apple a baked apple with cinnamon and caramel. The pecan brought out cocoa, cardamom, ginger and cinnamon spices with rich caramel.

Finish:

  • Mike: Medium long with oak and white pepper. The dried cranberry made the spice ginger and added lingering apple notes. The pecan made the finish very long and pleasant with oak, cardamom and lingering caramel.
  • Matt: Medium long with oak and cinnamon. The dried cranberry added some lingering baked apple. The pecan brought out a citrus note with oak and cinnamon.

I would pair this fine Bourbon with a Drew Estate Liga Privada cigar. I find this cigar has a rich vanilla and tobacco flavor that would pair well with the fruit notes of the Bourbon.
