The OOLA Distillery is in Seattle, Washington. They produce vodka, gin and Bourbon. Unfortunately, I did not visit the distillery on our recent trip to Seattle last November. Our schedule did not allow us to do so. It looks to be a very nice little distillery from their website. We recently received a bottle of their Bourbon and Matt and I sat down and tasted it. OOLA Distillery sources aged Bourbon barrel by barrel and blends it with their own four-grain mash bill Bourbon. Here are our tasting notes.

OOLA Waitsburg Bourbon Whiskey

Age: No Age Statement

Nose:

  • Mike: Caramel, vanilla, apricots, baking spices and oak wood.
  • Matt: Caramel, corn flakes, cinnamon toast and oak wood.

Taste:

  • Mike: Vanilla, cherries, apricots, cinnamon and oak wood. Tasted with a dried cranberry and nutmeg and allspice join the party. Tasted with a pecan and the caramel becomes a rich, buttered caramel with oak and cinnamon.
  • Matt: Caramel, raisin, cinnamon and oak wood. The dried cranberry brought forward the corn. The pecan added some notes of wild berries and enhanced the cinnamon.

Finish:

  • Mike: Medium long with oak and cinnamon. The dried cranberry added some lingering vanilla. The pecan made the finish longer and spicier.
  • Matt: Medium long with oak and burnt caramel. The dried cranberry added some cinnamon spice to the finish. The pecan brought out a buttery caramel in the finish.

I would pair this Bourbon with a NUB Maduro cigar. I think the vanilla and cedar spice of the smoke would pair well with the sweetness and spice of the Bourbon.
