Calumet Farm is a very famous horse farm in the Bluegrass Region of Kentucky. They have bred several Kentucky Derby winners and they have given their name to a whiskey company, Three Springs Bottling Company, who are bottling sourced whiskey. I like sourced whiskey when the company picks good barrels of whiskey and Three Springs is doing just that. I picked up a bottle of their 8 year old Calumet Farm Bourbon the other day and Matt and I sat down to taste it. Here are our tasting notes.
Calumet Farm 8 Year Old Bourbon
Proof: 90
Age: Eight Years Old
Nose:
- Mike: Caramel, vanilla, apples, white pepper and oak wood.
- Matt: Vanilla, raspberries, lemon zest and oak wood.
Taste:
- Mike: Vanilla, apples, apricots, white pepper and oak wood. Tasted with a dried cranberry and the vanilla becomes a creamy French vanilla and the pepper becomes a cinnamon. Tasted with a pecan and the vanilla becomes caramel with a hint of milk chocolate.
- Matt: Vanilla, raspberry cream, lemon zest and oak wood. The dried cranberry added a note of brown sugar. The pecan added caramel and coffee.
Finish:
- Mike: Medium long with oak wood and white pepper. The dried cranberry made the finish sweeter with oak wood and cinnamon red hot candy. The pecan made the finish longer with oak wood, white pepper and lingering caramel.
- Matt: Medium long with oak wood and lemon zest. The dried cranberry made the finish very creamy. The pecan made the finish long with oak and coffee.
I would pair this Bourbon with a cigar that has vanilla and cedar spice in the smoke. I would reach for a NUB Habano cigar.
