The other day, Matt and I, with Rosemary and Becca, visited Neat Bourbon Bar and Bottle Shop. While there, we encountered a bottle tasting of DeHart Whiskeys. We tried their whiskeys and we purchased two bottles for review. The first bottle is a Toasted Barrel Finish Bourbon made with 75% corn, 21% rye and 4% malted rye mash bill. The second bottle is a wheat recipe Bourbon made with 51% corn, 45% wheat and 4% malted barley. The DeHart Whiskey Company is a bottling company who sources their whiskey and was founded by two brothers, Mike and Dan DeHart in 2019.

DeHart Toasted Barrel Finish Bourbon

Proof:110.2

Age: Seven Years Old

Nose:

  • Mike: Caramel. apples, plums, baking spices and oak wood.
  • Matt: Caramel, honey, dates, nutmeg and oak wood.

Taste:

  • Mike: Caramel, apples, plums, lemon zest, ginger, nutmeg and oak wood. Tasted with a dried cranberry and cinnamon joins the party. Tasted with a pecan and the caramel and ginger are enhanced.
  • Matt: Caramel, honey, cinnamon, nutmeg and oak wood. The dried cranberry added citrus and cardamom and white pepper spices. The pecan brought out apple and coffee notes.

Finish:

  • Mike: Medium long with oak wood and ginger spice. The dried cranberry added cinnamon to the finish. The pecan made the finish very spicy with oak wood and ginger.
  • Matt: Medium long with oak wood and white pepper. The dried cranberry added some lingering citrus notes. The pecan made the finish dry with oak wood and coffee.

DeHart Wheat Recipe Bourbon

Proof: 120.6

Age: Seven Years Old

Nose:

  • Mike: Vanilla, marshmallows, caramel, apples, pepper and oak wood. The dried cranberry enhanced the apple and pepper. The pecan enhanced the caramel and added a citrus note.
  • Matt: Vanilla, cherry coke, cinnamon, nutmeg and oak wood. The dried cranberry added ginger spice. The pecan made the vanilla a rich caramel.

Finish:

  • Mike: Medium long with oak wood and pepper. The dried cranberry added lingering vanilla to the finish. The pecan added a citrus note to the finish.
  • Matt: Medium long with oak wood and cinnamon. The dried cranberry added ginger spice to the finish. The pecan made the finish long and spicy with oak wood and ginger spice.

I would pair these Bourbons with a cigar that has rich tobacco flavor and cedar spice in the smoke. I would reach for a Fuente Between the Lines cigar.
