Uncharted Bourbon is the latest release from Ingram Distilling Company. Ingram ages their sourced barrels on a barge on the Mississippi River in Columbus, Kentucky. This is a wheat recipe Bourbon bottled at 92 proof without an age statement. They sent me a bottle for review a few weeks ago and Matt and I sat down and tasted it. Here are our tasting notes.
Uncharted Bourbon

Age: No Age Statement
Nose:
- Mike: Rich vanilla, marshmallows, apples and oak wood.
- Matt: Caramel, brown sugar, chocolate, cherries and oak wood.
Taste:
- Mike: Vanilla, apples, cinnamon and oak wood. Tasted with a dried cranberry and black pepper spice comes out. Tasted with a pecan and the vanilla becomes a caramel.
- Matt: Caramel, brown sugar, chocolate and oak wood. The dried cranberry brought forward the cherry from the nose. The pecan made it taste of a caramel apple with chocolate and cherries.
Finish:
- Mike: Medium long with oak, cinnamon and lingering apple notes. The dried cranberry added black pepper to the finish. The pecan made the finish long with oak wood and caramel.
- Matt: Medium long with oak wood, cinnamon and nutmeg. The dried cranberry enhanced the nutmeg in the finish. The pecan made the finish long with oak and caramel apple.
I would pair this Bourbon with a cigar that is rich in vanilla and cedar spice. I would reach for a My Father Le Bijou 1922 cigar.
