The other day, Matt and I did a YouTube video on this bottle of Old Taylor Bottled-in-Bond. We liked it so much that we decided to make it a Flashback Friday blog. The whiskey was made at the Old Taylor Distillery, now Castle & Key Distillery. The whiskey was made in the Fall 1967 and bottled Spring 1975, at eight years old. Here are our tasting notes.
Old Taylor Bottled-in-Bond
Proof: 100
Age: Eight Years Old
Nose:
- Mike: Vanilla, tobacco, leather, apples, baking spices and oak wood.
- Matt: Caramel, Bananas Foster, apples, milk chocolate and oak wood.
Taste:
- Mike: Vanilla, tobacco, apples, allspice, cardamom and oak wood. Tasted with a dried cranberry brings out caramel and wild berries. Tasted with a pecan and caramel, apples and pepper come forward.
- Matt: Caramel, apples, cinnamon, cardamom and oak wood. The dried cranberry adds a note of brown sugar to the flavor. The pecan brings out chocolate and coffee.
Finish:
- Mike: Long with oak wood, allspice and lingering vanilla. The dried cranberry added lingering wild berry. The pecan made the finish long and spicy with oak and pepper.
- Matt: Medium long with oak wood and caramel. The dried cranberry made the finish longer. The pecan made the finish oak wood, caramel and lingering chocolate.
I would pair this fine Bourbon with a My Father The Judge cigar. I think the rich vanilla and chocolate in the smoke would pair well with the sweetness of the Bourbon.
