Noble Oak is bottled in Newtown, Ohio. The company is owned by A21 Wine & Spirits (having purchased it from Edrington in 2024) and they source this whiskey from MGP in Indiana and finish it in Ohio. They have a goal to plant a tree for every bottle sold. This is a noble cause well worth supporting as you get a good bottle of whiskey and they plant a tree. I picked up a bottle of their Bourbon the other day and Matt and I sat down to taste it. Here are our tasting notes.
Noble Oak Double Oak Bourbon Finished With Sherry Oak Staves
Proof: 90
Age: No Age Statement
Nose:
- Mike: Vanilla, marshmallows, cherries, allspice and oak wood.
- Matt: Caramel, cherry blossoms, cedar and oak woods.
Taste:
- Mike: Vanilla, marshmallows, cherries, allspice and oak wood. Tasted with a dried cranberry and raspberry and cinnamon come forward. Tasted with a pecan and caramel and white pepper come forward.
- Matt: Caramel, cherries, cardamom, cedar and oak wood. The dried cranberry added some ginger spice. The pecan added a note of chocolate.
Finish:
- Mike: Medium long with oak wood, allspice and lingering marshmallow. The dried cranberry made the finish long with oak wood, raspberry and cinnamon. The pecan made the finish long and spicy with oak wood and white pepper.
- Matt: Medium long with oak wood and caramel. The dried cranberry added ginger and cardamom spice. The pecan made the finish long with oak wood, ginger spice and cherries.
I would pair this Bourbon with a cigar that has dried fruit notes and vanilla in the smoke. I would reach for a Tabernacle Havana Seed cigar.
