Steve Beam sold part ownership in his Limestone Branch Distillery to Luxco in order to get the Yellowstone brand. He is related to the Dant Family that created the brand and he really wanted the brand to bring back the family heritage. I am glad he did because he is bottling some excellent whiskey in a brand that would have been a second tier brand under Luxco. I picked up a bottle of this Bourbon the other day and Matt and I sat down to taste it. Here are our tasting notes.
Yellowstone 7 Year Old Bourbon
Proof: 119
Age: Seven Years Old
Nose:
- Mike: Vanilla, pears, allspice and oak wood.
- Matt: Caramel, honey, toasted grains, tobacco and oak wood.
Taste:
- Mike: Vanilla, pears, apples, allspice, white pepper and oak wood. Tasted with a dried cranberry and caramel, pears, cherries, cinnamon and oak come out in the taste. Tasted with a pecan and rich buttered caramel and black pepper come forward.
- Matt: Caramel, honey, dates, black cherry, cardamom and oak wood. The dried cranberry enhanced the caramel and black cherry. The pecan enhanced the caramel and cardamom and brought a grape flavor.
Finish:
- Mike: Long with oak and white pepper. The dried cranberry made the finish long with oak wood, cinnamon and lingering cherry. The pecan made the finish very long with oak wood, caramel and black pepper.
- Matt: Long with oak wood and black cherry. The dried cranberry enhanced the black cherry. The pecan made the finish long with oak wood and grapes.
I would pair this fine Bourbon with a cigar that has lots of vanilla, tobacco and cedar spice in the smoke. I would reach for a Rocky Patel Decade cigar.
