I’ve always said Huber’s Distillery makes excellent whiskey. When Rosemary and I were at Huber’s recently to get strawberries I made a quick trip into the bottle shop and ran into Chris Huber. Chris was especially proud of this Double Oaked Bourbon, finished in new French Oak barrels. Huber’s has a robust finishing program. This expression was made for the Starlight Distiller’s Club, a membership that opens up events, barrels, and tastings at the Distillery.
Matt and I recently tasted this Bourbon, and here are our tasting notes.
Starlight Double Oaked French Oak Bourbon
Proof: 120.1
Age: 9.5 years
Nose:
- Mike: Caramel, plums, apricots, baking spices and oak wood.
- Matt: Caramel, strong oak, and raisin.
Taste:
- Mike: Caramel, apricots, cinnamon, nutmeg and oak. Tasted with a dried cranberry and toffee, apricots, cinnamon and oak come out in the taste. Tasted with a pecan and pepper notes are brought forward.
- Matt: Burnt caramel, raisins, and orange zest. The dried cranberry enhanced the caramel, raisins, and orange flavors. The pecan brought out chocolate.
Finish:
- Mike: Medium long with oak wood, cinnamon and lingering apricots. The dried cranberry made the finish long with oak wood, toffee and cinnamon. The pecan made the finish m long with oak wood and pepper.
- Matt: Medium with caramel and orange zest. The dried cranberry ramped up the oak and raisin notes. The pecan made the finish medium long with oak wood and chocolate.
I would pair this Bourbon with a Fuente Short Story cigar. The cedar spice in the cigar would pair well with the caramel and toffee notes of the whiskey.
