Rabbit Hole Distillery, in Louisville, Kentucky, has released a series of whiskeys dedicated to Louisville artists. They have the label created with a painting from the artist and this one features Hogan’s Fountain in Cherokee Park. They make these whiskeys a small batch of 15 barrels and the mash bill is a four grain mash bill. They use 70% corn, 10% malted wheat, 10% honey malted barley and 10% malted barley. It creates a very good Bourbon. I recently picked up a bottle at the distillery and Matt and I sat down to taste it. Here are our tasting notes.
Rabbit Hole Cave Hill Artist Series – Hogan’s Fountain
Proof: 106.8
Age: Six Years, Seven Months
Nose:
- Mike: Caramel, honey, apricots, baking spices and oak wood.
- Matt: Vanilla, white chocolate, cinnamon, red wine and oak wood.
Taste:
- Mike: Caramel, dark chocolate, cardamom, apricots and oak wood. Tasted with a dried cranberry makes the Bourbon spicier with cardamom and black pepper. Tasted with a pecan and it tastes of chocolate fudge with a hint of fruit and spice.
- Matt: Vanilla, white chocolate, cinnamon, red hot candy and oak wood. The dried cranberry brought out the fruity notes with red wine and cinnamon toast. The pecan brought out flavors of dark chocolate, coffee with cream and cinnamon.
Finish:
- Mike: Medium long with oak wood, cardamom and lingering chocolate. The dried cranberry made the finish long and spicy with oak and black pepper. The pecan made the finish long and sweet with caramel and chocolate.
- Matt: Medium long with oak wood and red hot cinnamon candy. The dried cranberry added pepper to the finish. The pecan made the finish long with oak wood and cinnamon
I would pair this fine Bourbon with a cigar that has plenty of cedar spice and vanilla in the smoke. I would reach for a NUB Habano cigar.
