On our recent trip to the Northwest, Rosemary and I visited the Woodinville Distillery in Washington State. While there, we picked up a bottle of their cask strength Bourbon. Matt and I sat down and tasted it the other day and here are our tasting notes.
Woodinville Cask Strength Bourbon
Proof: 113.72
Age: No Age Statement
Nose:
- Mike: Vanilla, apricots, allspice and oak wood.
- Matt: Vanilla, strawberries, lavender floral notes, and oak wood.
Taste:
- Mike: Vanilla, apricots, allspice and oak wood. Tasted with a dried cranberry and white pepper joins the party. Tasted with a pecan and cherries and milk chocolate flavors come out.
- Matt: Vanilla, raspberry tart with a hint of lavender and oak wood. The dried cranberry brought out more fruit. The pecan brought out some earthy notes of tannins and changed the vanilla to caramel.
Finish:
- Mike: Medium long with oak, spice and lingering vanilla. The dried cranberry made the finish longer with more spice. The pecan made the finish long and dry with oak, spice and a hint of milk chocolate.
- Matt: Sweet oak wood and lingering raspberry. The dried cranberry made the finish sweet with lingering sweetness of sugar cane. The pecan added a hint of spearmint to the finish.
I would reach for a NUB Maduro to pair with this Bourbon. I think the vanilla and rich tobacco of the smoke would pair well with the vanilla in the Bourbon.
