Greene. They were introducing their latest Bourbon that they have named “Unabridged”. It is an interesting and tasty blend of Kentucky distilled, Tennessee distilled and Texas distilled Bourbons. Heather Greene is a very talented blender of whiskey. She has decades of experience in the industry. She started in the industry as a brand ambassador in Scotland, before returning to America and getting a job as the whiskey sommelier for the Flat Iron Room in New York City. About six years ago, she left the Flat Iron Room to be a co-founder and partner in the Texas distillery of Milam & Greene. There she has blended several excellent expressions of their whiskeys. Matt and I sat down and did a second tasting of the Unabridged and here are our tasting notes.
Milam & Green Unabridged Bourbon

Age: No Age Statement
Nose:
- Mike: Vanilla and caramel with apricot fruit, cardamom spice and oak wood.
- Matt: Vanilla with a hint of rye grass, lemon and oak wood.
Taste:
- Mike: Vanilla, caramel, apricots, cardamom and white pepper spice, oak wood. Tasted with a dried cranberry and some ginger spice comes out in the taste, Tasted with a pecan and the vanilla is enhanced and the spice becomes white pepper.
- Matt: Buttery cream, vanilla, peaches and oak wood. The dried cranberry brought out notes of dark brown sugar. The pecan brought out rich, buttery caramel notes.
Finish:
- Mike: Medium long with oak and spice. The dried cranberry made the finish longer with oak and ginger spice. The pecan made the finish long and dry with oak and white pepper.
- Matt: Medium long with oak and lingering vanilla. The dried cranberry brought out notes of caramel and brown sugar. The pecan made the finish very long with oak and lingering caramel.
I would pair this fine Bourbon with a cigar that is rich in vanilla and cedar spice. I would reach for a Don Pepin Garcia Maduro cigar.
